This is our take on the classic Indian dish Butter Chicken - marinated chunks of chicken (we recommend using chicken thighs) cooked in a creamy, aromatic sauce. We can't make any wild health claims for this dish but suffice it to say that it's rich, indulgent and, we think, absolutely delicious! It also goes extremely well with paneer so if you fancy a tasty meat-free alternative, just switch the chicken in the recipe for paneer.
